Chennai humidity is hostile to certain cakes. Whipped cream collapses if it sits at 32°C for an hour. Buttercream stays stable longer but the design softens. Fondant survives heat but hates fridge humidity, which makes it sticky.
Rules per type. Whipped fresh-cream and chocolate-ganache cakes: refrigerate as soon as the box arrives. Let them stand 20–30 minutes before cutting so the cake itself softens (cold sponge tastes drier than it is).
Buttercream cakes: 4–6 hours at room temperature is fine if your room is under 28°C. After that, refrigerate. Take the cake out 15 minutes before serving so the buttercream stops being too stiff to scoop.
Fondant cakes: never the fridge. Keep in a cool, dry, dark cupboard. The fondant exterior protects the cake inside for up to 48 hours at room temperature. Once cut, refrigerate the leftover.
